Our story begins in 2013 when the acclaimed Danish chef Hannah Grant met the trailblazing American scientist Stacy Sims. Having cut her teeth at the world’s top restaurants — including Noma and the Fat Duck — Hannah was by then working as the head chef for a professional cycling team. Throughout her six years meeting the high-octane needs of elite riders competing in the world’s most grueling endurance races — such as the Tour de France — Hannah had pioneered the use of “performance cooking”, focusing on both physical and mental wellbeing and changing the way that pro cyclists eat forever. She soon found a sparring partner in Stacy Sims, a pioneer in the research of performance nutrition. Working for both Stanford University and USA Cycling, Stacy had challenged the existing dogma and propelled a new generation of hydration products.
